How many times has a child been heard to say how much more they prefer boxed Mac and Cheese over homemade or even a gourmet put-together macaroni and cheese? For as often as this has been heard, one could be rich, if a dime were collected for every time it was heard!
Even though this version is prepared from a box — Kraft’s Macaroni & Cheese — it may or may not rank well with kids. But grown-up kids sure like it enough. It is just cheesy, very meaty, spicy and savory — simply, satisfying and delicious. Comfort food!
This twisted recipe was inspired by all the Mac & Cheese lovers out there that are always looking for new ways to prepare it. And this Macaroni and cheese is a breeze to put together, too.

1/2 tablespoon, each of, olive oil, bacon grease (lard works fine, too)
3 pounds ground meat
1 onion, peeled, finely chopped
6 garlic cloves, peeled, finely chopped
1 large jalapeño pepper, seeded, finely chopped
2 serrano peppers, seeded, finely chopped
1 teaspoon chili flakes
1 tablespoon curry powder
2 teaspoons turmeric
1 teaspoon ground nutmeg
1/2 cup cream sherry
3 envelopes McCormick Original Taco Seasoning
2½ cups hot water
In a large fry pan, on the large burner and on medium heat, heat fats, add meat and sauté for about 5 minutes. Add onion and sauté for about 3 minutes. Add chiles (jalapeño, serranos, chili flakes) and sauté for about 2 minutes. Add garlic, the curry, turmeric and nutmeg and continue frying meat until it is golden brown. Add sherry and incorporate well. Add the Taco Seasoning and hot water and blend well. Bring to a quick boil, reduce heat to medium and cook meat mixture for about 20 minutes or until liquid is mostly absorbed; set aside.
Kraft Macaroni & Cheese and McCormick Original Taco Seasoning can be purchased at any local San Jose Savemart, Safeway, or Lucky Stores.
3 boxes Kraft Macaroni & Cheese (reserve the cheese envelopes to add later), boiled according to box’s instructions for time, and then drained; set aside.
1/2 cup (1 cube) salted butter
1 cup heavy whipping cream
8 ounces cream cheese
3 Kraft Macaroni & Cheese envelopes
In a pot, set on medium-low, add butter, cream, cream cheese and cheese envelopes. Next, add the hot, drained pasta to the pot and gently stir until butter and cheese are melted and thoroughly incorporated. Lastly add the taco meat mixture, combine well and heat through completely. Serve hot, and enjoy topped with chopped tomatoes and slices of avocado.
