It’s National Eat Dessert First Month and National Peaches Month and so I’m inspired to make something to go with my morning coffee:
Okay – I know what you’re thinking – crisp for breakfast? No. But come on, I’m sure it’s no worse than that donut you were contemplating. In fact, it’s probably better tasting and better for you. Besides, this crisp is delicious. Plus, eating dessert first doesn’t necessarily mean having it before dinner. To me, it means the freedom to jump start the day with dessert. Life is more fun this way, so get your coffee and get back to the kitchen for a little easy baking.
6 large peaches, peeled, pitted, and sliced
1 cup flour
1 cup sugar
½ tsp. cinnamon
½ tsp. vanilla extract
1 stick butter
Lay sliced peaches in an 8×8 baking dish. Mix dry ingredients and cut butter into mixture until crumbly. Sprinkle over peaches. Bake at 375 for about half an hour. Serve warm drizzled with a little maple syrup.
Enjoy with a mug of fresh coffee. I recommend the 21st Street House Blend or something from Nicholas Coffee Company, both local to Pittsburgh. (And, you should be able to get local peaches, too.)
