When this Examiner was diagnosed with Celiac Disease more than a decade ago the most daunting thing for me was learning how to cook. That’s right…all this Examiner knew how to do was boil, cut and heat, which really isn’t cooking. Gluten-free cooking class were unheard of, but now there are a number of local personal chefs out there picking up the slack including Charli Vogt.
Charli Vogt, RN, MN, MPH has been teaching cooking classes for more than 35 years. Charli holds advanced degrees in Nursing and Public Health, so she has a particularly excellent vantage point to see the worlds of both alternative and conventional healing.
Charli started cooking Gluten Free because one of her clients was following the gluten-free diet. When Charli started eating the gluten-free food she found some life-long stomach problems cleared up, so she has been cooking gluten-free ever since and now offers local gluten-free cooking classes.
She regularly teaches a “Gluten Free Desserts for the Holidays” class at Oakhurst Community Gardens.
This class includes desserts made with alternative flours as well as dishes that do not have flour at all in them. This class is participatory so come ready to cook and to sample what we make. Bring containers to carry home samples. The charge for the class is $30 for Garden members and $35 for non-members.
She has created another cooking class that is called “Demystifying Gluten-Free Baking” that is specifically about the alternative flours and thickeners and how to use them. She uses a number of Hagman’s and Fenster’s basic blends when adapting new recipes. She thinks their mix of flours works better than individual flours.

What a great present a cooking class would make for a newly diagnosed Celiac. It would also be fun to have the whole family take a gluten-free cooking class, so they can get involved and learn more about the gluten-free diet.
