I have just discovered a wonderful recipe for a dish that is now a family favorite. Usually we only enjoy this as an appetizer at restaurants that know how to make it right. But in the past 2 weeks I have received rave reviews for this dish. That is why I simply must share this recipe with you, my readers!
Now this was a tough decision being that this is my first article. Because I know I’ll have to live up to this great dish in all the articles to follow. But I just can’t keep this to myself! My girlfriends love it, my business partners love it, my husband, and even my kids love it! Well, really, who doesn’t love a good spinach artichoke dip? It’s bubbly, cheesy, flavorful, and the only way I know to get a bunch of kids and adults to gobble more spinach than Popeye himself!
How did I find such a gem? I was on a search for a new dish to bring to a monthly get together with friends. You know how you can get stuck making the same dish every time because they all love it so? Well, being the creative person I am, I wanted to switch to a new dish, but it had to be delicious, because I still wanted my rave reviews (yes I’m modest).
I was pondering this the Friday before a Saturday get together with friends when I remembered the last time I’d enjoyed a delicious homemade spinach artichoke dip. It happened to be at a friend’s home, and the hostess (who shall remain unnamed) was never keen on sharing her recipes, so I dared not ask. Well, this particular Friday I shared my dilemma with a co-worker who introduced me to a wonderful website: www.cooks.com. After reading through a few recipes on the site I decided one recipe really sounded worth trying. The recipe was simply called: Best Spinach and Artichoke Dip. And wow, was it true to its name! The ingredients are simple, easy to find in any grocery store, the process is not time consuming, and the results give you a beautiful presentation and mouthwateringly delicious dip!
To my master cooks, those who hardly use measuring cups or follow recipes – be warned. I too usually have to adjust recipes for my family’s tastes, add a little more of this, a little less of that, never really measuring it all out. I’ve simply been cooking long enough to know what is going to make any recipe work for my household. But trust me; this is one recipe you will want to make without adding ANYTHING extra. And it will turn out beautiful. Just follow the recipe and you will be sharing the creamiest, most delectable, melted cheesy, scoopable dip you have ever smacked your lips over! Trust me on this one. Even if you suffer with the shakes as you resist adding spices or extras, deal with it and you won’t be sorry! Remember that Rice Krispies Treats commercial where they say something like “they taste like you slaved over the stove all day”? Yeah! That’s exactly how you will feel!
And get ready, because everyone will want to know how you made it, what did you put into it, etc. as they gaze at you lovingly, devouring the delicious creamy creation you’ve just set on the table.
I like it best with Ritz crackers, others like it with tortilla chips. Either way, the pan will disappear in no time. Vanish. This I promise you. The only adjustment I made was that I put in in a Corningware dish and baked in the center of my oven to melt the top layer of cheese (about 20 mins at 350 degrees). This way it remained warm for about 2 hours, enough time for me to get it to the event and not have to reheat. Best spinach and artichoke dip
- 1 pkg. frozen spinach thawed
- 1 jar marinated artichokes, chopped
- 8 oz. Philly cream cheese
- 8 oz. sour cream
- 3/4 c. shredded Parmesan cheese
- 8 oz. shredded Monterey Jack cheese
- 1/2 onion finely chopped
- 1 stick butter
- red pepper flakes to taste
Sauté onions in butter, adding ingredients while mixing and blending well after each addition. Add ingredients in this order: Spinach, Cream Cheese, Sour Cream, Parmesan Cheese, Artichoke Hearts, Crushed Red Pepper Flakes.
Remove from heat and put in crocks or microwave dish. Top with Monterey Jack Cheese and melt.
Serve hot with chips or bread.
Yummy! A party favorite! May also add Mozzarella Cheese on top and lightly brown.
