Here in Fort Myers, Florida, Lee County kids go back to school August 23rd. A healthy breakfast is not normally among the priorities of kids at this time of year. They’re buying supplies, new clothes, and thinking about the upcoming school year.
If they want to do well, breakfast is essential:
- Better test scores!
- Better attendance!
- Better behavior!
- More energy!
The benefits of eating breakfast before taking on each new school day are worth the effort. Even for parents, breakfast is the most important meal of the day. It’s something like, well, a magic pill!
But, getting kids to eat a healthy breakfast can be tricky. The thought of spooning down some oatmeal, or gruel, same ole cereal isn’t always motivating.
If kids have been sleeping or sedentary during the summer, you’ll want them to start getting up earlier, and getting into the act of preparing these delicious morning muffin tin breakfasts.
This is flexible enough for you to add their favorite ingredients. Try some chiles, salsa, mushrooms, tomatoes, turkey sausage, or shredded mozzarella as toppings:
Big Breakfast Muffins:
- 3 tablespoons unsalted butter, melted
- 8 slices whole grain sandwich bread
- 6 slices turkey bacon
- 6 large eggs (or egg white substitute)
- cilantro (pinch)
- salt pepper (low sodium)
Preheat oven to 375°. Butter muffin tins. Flatten bread slices and cut into 8 round pieces with cookie cutter. layer bread halves into the muffin tins. Brush bread with additional butter.
In skillet, cook bacon, almost crisp, flip once. Put one slice on each bread framed muffin tin, crack egg over each piece of bacon (or pour 1/4 cup egg whites into space), season. Bake until egg whites are set, approx. 20-25 minutes. Let cool and serve.
You can keep these in the refrigerator for easy heat up, when necessary. You can alternate with pancake batter instead of the bread inserts if your child prefers pancakes in their “Big Breakfast Muffin”

Remember that kids mimic their parents. So, if the parents don’t eat breakfast the likelihood is they will not be eager to eat breakfast either. So, make some delicious Big Breakfast muffins for yourself as well, and enjoy them with the kids before they leave for school.
